Shepherd's Pie

People don't think of Anglo-Americans as ethnic, but they too dress up in costumes and celebrate national holidays. They dress up in colonial American costumes, decorate colonial houses, and eat Roast Beef, Yorkshire Pudding, shepherd's pie, plum pudding and hot cross buns. They are some of the most ethnic-conscious Americans of all! This recipe is from Kate Burton, the actress daughter of the late British actor, Richard Burton, in MORE Recipes and Reminiscence (2006) by Roy Harris, a collection of recipes from theater people. The American side of the hyphenation is the subsitution of beef and the addition of ketchup.

 

Ingredients

  1. 2 pounds ground beef
  2. 1 tsp salt
  3. 2 tbs olive oil
  4. 1 tsp ground pepper
  5. 1 large onion, finely chopped
  6. 1 tsp thyme
  7. ketchup to taste
  8. 3-4 carrots
  9. 6-8 large Idaho potatoes
  10. stick salted butter
  11. whole milk, to taste
  12. thyme, to taste

Steps

  1. Peel potatoes, chop and boil.
  2. When potatoes are ready, drain and mash them with a masher or fork.
  3. Add sat, butter, and whole milk, to taste.
  4. Put aside.
  5. Meanwhile, chop and steam or boil carrots.
  6. Preheat oven to 375 degrees
  7. Meanwhile again, sautee onions in oil until "clear."
  8. Add meat and saute quickly until pink has almost disappeared and the meat is crumbled.
  9. Add salt, pepper, thyme to taste.
  10. Bring to a boil and simmer, uncovered, until most of the liquid is gone.
  11. Strain off any fat; remove from heat.
  12. Add carrots to to the meat mixture, and enough ketchup to bind it.
  13. Put meat mixture in a 2-quart casserole, then gently law mashed potatoes on top, so as not to mix with meat.
  14. It should fill the whole casserole. Dot the top with softened butter.
  15. Put in the oven for 30 minutes.
  16. For the last few minutes, turbn on broiler to brown the top.
  17. Let sit for 10 minutes before serving.
