This is a very close adaptation of Paul Prudhomme's recipe from his first book Louisiana Kitchen.  It appears insanely complex, and does take a bit of prep time, but the result is very worthwhile.  The best part is that you can freeze this sauce and it tastes even better the second time around.  As a cooking instructor once told me: cook once, eat three times.

You need to be warned, however, that if you don't like spicy food, don't make this dish!

New Yorkers are as proud of their rich history, as they are of their sports teams.  Long before the G-Men their were the Dutch Settlers. And long before Eli was marching his team down the field, Henri Hudson was sailing his boat up one of New York's longest rivers.

 

So it seems appropriate to pay a little homage to New York's fine history by imagining what the Dutch Settlers of the 1600s might of been snacking on this coming Sunday while they cheered on their New Amsterdam Giants!
