    <title>Mothers Everyday Fruit Cake</title>
    <description>&lt;p&gt;I know what you are thinking argh not fruit cake, but this is not your normal rich fruit cake that you put out when guests come around during the holidays, this cake is very light and buttery. Great with tea or coffee. My mother used to make this cake every week. Now I do the same.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt; For the dried fruit you can choose what ever you have but cut large fruit down into raisin sized pieces so you can cut it. The only special equipment you need is a loaf pan. If you can&amp;#39;t find self-raising flour you can make it. I use the following ratio 2 Cups of all-purpose flour to one tablespoon of baking powder and a pinch of salt.&amp;nbsp;  &lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;You will end up with one loaf shaped cake, you serve by cutting slices like you woud bread.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;</description>
